A triumph of Mediterranean scents:  a light onion sauté, a shower of capers and black olives, the good Roma tomato pulp and the tantalizing scent of fennel and parsley.Cooked in a pot, slowly, and adjusted with salt. Just what you do in the house, with no added sugar or tomato concentrate.

 

Try it toasted on bread and top with anchovies and oregnao.
