A hard cheese from cow and sheep milk. Left to mature for about a year and a half, then refined in chestnut leaves to transform and enrich with a distinctive and exceptional taste. Pairing with a local sparkling wine or craft beer, this one is best savoured alone as a table cheese, but it does go well in a risotto. In Piedmont from where it originates, there is a local compote known as 'cugna', made from grapes and autumnal fruits like apples, figs and hazelnuts, which makes a good accompaniment
