From cow's and sheep's milk the Occelli® al Barolo is seasoned for a few months on wooden planks in Valcasotto and aged in pomace enriched with Barolo DOCG wine. It is a great cheese for tasting and with vintage red wines. Occelli also suggest it used in a risotto with berries, askus if you'd like the recipe!
