Cow’s milk,
A blue cheese with strong fascinating highly-flavoured taste.
The more you chew it the more stronger flavour it release until a hot peppery.
It is covered with a mix of Alpine herbs including marjoram, mint, thyme, camomille and verbena.
A natural mould is produced and carefully fostered so as to allow the cheese to absorb its sweet but spicy taste. It is then left to mature for a few weeks on wooden planks made from fir trees in an ambient microclimate which is both cold and wet, then seasoned for 3-4 months.
Lovely with fruit jams.
