Naturally coloured semolina pasta from Piedmont. These are made with porcini mushrooms lending themselves perfectly to a mushroom based sauce or a slither of truffle butter. 

 

 L'Antica Madia say ''Coloured pasta is too often associated with artificiality. In our case it is nothing more than the modern interpretation of an ancient ritual. The idea comes from Ivo and his vivid memory of grandmother Emilia, of pasta flavoured with country herbs: a bunch of nettles, a few sage leaves, the sprig of rosemary, and in an instant the dough would take on a different flavour, but also a different colour. Our line of coloured pasta is made only with natural dyes and plays with the flavours of the earth, bringing to the plate a new-looking product that allows you to play with unexpected combinations and tastes.''
