Spaghettata Piccante is traditional Italian spicy herb and spice mix of garlic, chillies and parsley. Originating from Tuscany, it has many uses: on pasta, mixed with olive oil as a dip or marinade, or to season pasta sauces and stews.

Put a couple of teaspoons of this mix into a pan and lightly fry in olive oil for a couple of minutes. Cook some spaghetti in boiling water, drain and then toss into this mix. Serve with a sprinkling of parmesan and a little nutmeg.
